The Best Easy Butter Chicken Recipe!

Butter Chicken Instant Pot Recipe

TBH the kitchen is not my comfort zone so I gravitate towards quick and easy recipes. I love a simple to follow recipe that I can just throw in the Instant Pot or oven and let it do it’s thing. I found this yummy butter chicken recipe while thumbing a Crock-Pot Express recipe booklet so I can’t take full credit but I did add my own twist. Watch my YouTube Video to follow along!

Butter Chicken Instant Pot Recipe
YIELDS: 4-6 SERVINGS

What you’ll need:

  • 1 can (about 14 ounces) diced tomatoes
  • 1 tablespoon minced garlic
  • 2 teaspoons minced fresh ginger
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon ground red pepper
  • 2 pounds boneless skinless chicken breasts
  • 2/3 cup full-fat coconut milk, well stirred
  • ¼ cup (½ stick) butter, cut into pieces
  • ½ chopped fresh cilantro, plus additional for garnish
  • Hot cooked rice and naan bread (optional)

DIRECTIONS:

Combine tomatoes, garlic, ginger, salt, turmeric, garam masala, paprika, cumin and red pepper in the Cooking Pot; stir to blend.

Add chicken. Secure lid. Press BEANS/CHILI; set pressure to HIGH and time to 10 minutes.

Make sure Steam Release Dial is in the “Seal” (closed) position. Press START/STOP.

Once cooking is complete, quick release pressure. Remove chicken to medium bowl.

Use immersion blender to blend sauce in the Cooking Pot until smooth (or purée sauce in blender and return to pot). NOTE: This is where my twist comes in. Since I do not own an immersion blender, I used a hand mixer which produces a less creamy sauce; however, the final results were still delicious!

Let sauce cool 5 minutes. Add coconut milk, butter and ½ cup cilantro; stir to blend.

Break up chicken into several smaller pieces for serving. I cut mine into cubes.

Press BROWN/SAUTÉ; return chicken to sauce. Cook 4 minutes or until heated through.

Serve over rice and/or with naan. I used basmati rice and it was delicious!
